Christmas Shortbread cookies by EHL Chefs

Christmas is right around the corner and nothing brings out the festive mood as much as baking. These shortbread cookies are an easy and delicious recipe to try at home during the holidays. This recipe is brought to you by Chef  Julien Boutonnet, EHL Senior Lecturer Practical Arts and Meilleur Ouvrier de France 2015 for pastry and candy making.

The ingredients:

  • 120g soft butter 
  • 100g powdered sugar
  • fresh lemon zest
  • 2 egg yolks
  • 200g white flour

Follow these steps to prepare the Christmas shortbread cookies:

 

  • Soften the butter in the microwave, then whip to obtain a soft and creamy texture.
  • Then, mix using a baking spatula with the sifted powdered sugar and the fresh lemon zest.
  • Add the egg yolks and continue to stir.
  • Finish by adding the flour, then mix until you obtain a smooth and homogeneous dough.
  • Spread the dough on a baking tray on a sheet of baking paper and cover with cling film.

Set aside in a cool place for at least 1 hour.

 

  • Roll out the dough to a thickness of about 2 cm and cut out the desired shapes.
  • Brush with a beaten egg to glaze.
  • Cook in a ventilated oven at 165 °C for about 10 minutes.
